Mladen Todorovic, former proprietor of "Aspen Over Easy," jumped at the opportunity to open a restaurant on Main Street in Carbondale, Colorado. Famous for their fresh juices, variations on eggs benedict, crepes - and any breakfast dish you can imagine - Aspen Over Easy was a mainstay of the brunch life in Aspen. He's excited to bring similar dishes to Carbondale.
Kyle Raymond creates inventive dishes that highlight the local agriculture in the valley, with seasonal ingredients and a rotating menu. Roosters will also feature delectable & tender meats with a rotisserie-centric preparation process. Raymond was previously Executive Chef at Grey Lady Aspen, and has been cheffing in Aspen since 2007.
In a recent interview with The Sopris Sun, Raymond said, “This is community based, rather than strictly a ski town where tourism is your baseline,” he said of Carbondale. “We want to be a community-based restaurant. We are Roosters, and we’re here to roost.”
